Coconut Chia Seed Pudding
After a 3 day long work conference where I ate copious amounts of fried food, carbs, and consumed alcohol, I thought I needed to consume something that would clean me out, literally.
I was at Bi-Rite the Friday night after the conference, looking for a nice bottle of Pinot to share with a couple friends when I spotted a huge bag of chia seeds, and impulsively opted to buy it.
I’d been reading a lot about the health benefits of Chia seeds lately and the benefits were astounding!’
They are chock full of:
- Protein
- Omega-3 fatty acids
- Fiber
I looked online for a couple recipes for Chia Seed Pudding, and picked a few simple looking ones and added my own twist to it.
Yes, it was delicious, and healthy too! Plus, it kept me full for a good 3-4 hours which was also fairly amazing.
Generally, after a bowl of yogurt or oatmeal I am starving at lunch but this pudding was surprisingly filling.
- Get a glass jar or bowl and mix the coconut milk, chia seeds and vanilla pod together.
- Stick in the fridge and leave overnight.
- In the morning, give the mixture a stir, and top with fruit, sliced almonds, and add a bit of honey to taste.
BEST OF ALL: the coconut milk and fruit gives the dish a bit of natural sweetness, so you don’t need to add much added sugar.
