Tropical Acai Bowls
Spring is one of my favorite times of year, especially in San Francisco.
The last of the cold weather seems to end, flowers come out in full bloom, and glorious park days commence, after a brief winter hiatus. The first weekend before Spring, the weather was downright tropical- 70+ degrees, (even at night), and I started craving a tropical, fruit filled breakfast.
I generally stick to local fruits, but when I was at Rainbow Grocery, I came across these frozen acai packets in the freezer section, and became inspired to make acai bowls the following morning for breakfast.
I’ve had acai bowls on occasion before- Cafe Brazil in Santa Cruz makes an amazing version, and the acai bowl trend seems to be all the rage now in LA and Santa Barbara these days.
Plus acai is chock full of nutrients, relatively low in sugar and is considered a superfood!
I looked up a few acai bowl recipes and most consisted of the same formula- take a frozen acai block and blend with your choice of liquid (generally coconut water), and some frozen fruit (often banana to keep it creamy)
Then top with a variety of options, whatever tickles your fancy! Most recipes seemed to include cut up fruit, granola, and other toppings such as grated coconut or cacao nibs. I picked up a few extra items at the store…
And then I started making the components of the acai bowl. It was super simple!
All I did was take 2 acai frozen packets, and I blended them with a little less than a cup of coconut water, and added a frozen banana and a couple pinches of cacao nibs to give it a delicious chocolatey, banana-y flavor.
I then added some toppings galore- chopped mango, sliced banana, dried unsweetened coconut, homemade granola, almond butter, and chia seeds!
M* devoured a bowl of this as well, and it’s only a matter of time before I try this again with some summer fruit!
Tropical Acai Bowls
2 packets Sambazon acai (Find it at Whole Foods or Rainbow Grocery)
Coconut water- 1 cup
1 frozen banana
Toppings of your choice: Get creative! I like sliced bananas, mango, granola, flaxseed, chia seeds, dried coconut, cacao nibs, almond butter. 1
1. Blend the Sambazon packet on high with the coconut water and frozen banana.
2. Scoop out and cover with desired toppings
3. Eat immediately!! Enjoy
